THE EFFECTS OF TIME AND THAWING CONDITIONS ON THE AMOUNT OF BIOGENIC AMINES AND CHANGES OF BACTERIAL LOAD OF SKIPJACK TUNA (KATSUWONUS PELAMIS)

Abstract

 Fish after DEFROSTING will be decayed as fast as fresh fish. then the effect of different thawing conditions after 10 and 16 hours in environmental temperature (25-30°C), environmental temperature with spraying water (15-20°C) every three hours and precooling temperature (5-10°C) on the amount of BIOGENIC AMINES (histamine, putrecsine and cadaverine) and bacterial load (mesophiles and psycrotoroph) in SKIPJACK tuna (Katsuwonus pelamis) was monitored. The results of determination of BIOGENIC AMINES by HPLC with UV absorbtion in 254 nm were the same as the result of bacterial load counting. The changes of the amount of putrecsine was not considerable while the most and the least amount of cadaverine and bacterial load was shown respectively in thawing for 16 hours in environmental temperature (25-30°C) and thawing for 10 hours in precooling temperature(5-10°C) (p<0.05), but histamine was not detected in any of the samples. Then putrecsine and cadaverine were better indices to histamine for determination of SKIPJACK tuna quality.
