IDENTIFICATION OF AMINO ACIDS AND FATTY ACIDS PROFILE IN FILLET OF SILVER POMFRET, PAMPUS ARGENTEUS (EUPHRASEN, 1788) OF PERSIAN GULF

Abstract

 In this study the nutritive value of PAMPUS ARGENTEUS fillet, as one of the valuable constituents in human diet was evaluated. This fish was captured from coastal waters of Bushehr Province, in 2011. The crude protein content (net weight), crude lipid and moisture of the specimens were measured as 19±0.27, 5.1±0.11 and 74.8±0.44 percent (wet weight), respectively. The results showed that silver pomfret is a good source of essential amino acids and essential fatty acids. The major amino acid that detected were glutamic acid, Lysine, Aspartic acid, valine and leucine with the percentages of 14.72±0.03, 10.87±0.13, 10.44±0.20, 9.62±0.07 and 9.23±0.11 percent respectively. Total saturated fatty acids (25 kinds) were determined as the major constituent (50.4%) of the whole lipid content. The dominant fatty acid detected was Palmitic acid fallowed by Leinoleic acid, Oleic acid, Docosahexanoic acid and Meristic acid, 12.76±0.52, 10.61±0.36, 7.7±0.17 and 5.3±0.36 percent respectively. The unsaturated fatty acids content comprises  w3 (11.69%),  w6 (12.76%) and  w9 (10.61%). As our results revealed, silver pomfret fillet could be considered and introduced as a valuable source of food meat for consumers.
