Abstract

In order to distinguish unauthorized tissues in HEATED MEAT PRODUCTs in Mazandaran province, products of 7 existing factories there were histologically examined. Each product were divided into 3 equal parts and from each parts 2-3 samples with 1cm. thick were taken and fixed in 10% buffered formalin. Routine histological techniques were used and 6.umthick sections were stained with heamatoxylin-eosin and studied under light microscope. Udder, lymph node, salivary gland, skin and its accessories and rumen were those unauthorised organs which were detected on products of some of those factories.
