Effect of Plant Extracts and Packaging on Microbial Quality and Antioxidant Activity of Basil

Abstract

 Vegetables are exposed to damage and contamination by pathogens at various stages. In order to disinfection and increase the shelf life of vegetables, it is necessary to use natural compounds with suitable Packaging. In this study, the reducing effects of natural plant compounds on microbial load of basil and their effects, along with two types of packages, zip-plast and cellophane, on total phenolic content and antioxidant activity of basil were investigated. Hydroalcoholic extracts of Green Tea and Khorasani Thyme were prepared using maceration method. Basil leaves were exposed to concentrations of 10, 20 and 40 percent of the extracts as well as water and 20% ethanol (as controls) for 5 minutes. Then they were placed in the cellophane and zip-plast packages and stored in a relative humidity of 85% at 7° C. The bacterial count was measured after basil treatment with different concentrations of both extracts. Total phenolic content and antioxidant activity of basil samples were measured during the storage period at four time points. Green Tea extract at the concentration of 40% reduced the Enterobacteriaceae population by 4. 48 logarithms. Khorasan thyme and Green Tea extracts were able to bring coliform bacteria population to zero at the concentration of 40%. The least change in total phenolic content compared with fresh basil was found in the samples treated with 10% Khorasan thyme extract and packaged in zip-plast packages; in the case of antioxidant activity, the samples treated with 10% concentration of both extracts and packaged in zip-plast bags showed the least change. In conclusion, Green Tea and Khorasan thyme extracts as natural compounds with high antioxidant and antimicrobial properties, along with zip-plast Packaging, can be considered as good candidates for increasing the shelf-life and reducing the microbial pollution of basil.
