Abstract

The effects of pH (5 to 7.4) , sodium chloride (NaCl, 0.5 to 3%), potassium sorbate (KS, 0.0 to 3%) and temperature (T, 15 to 35°C) on LAG TIME (Lag) of growth of Sahnonella typhimurium in a model broth (Brain Heart Infusion, BHI) were evaluated in a factorial design study. The lagtime of growth of S. typhimuriwn was affected significantly (P < 0.002) by the values of KS, pH f T but not by NaCl. Concentration used in this study (p = 0.5). Regression equation was derived relating Lag to KS , NaCl, T and pH. From this model the values of predicted LAG TIME of S. typhimuriwn can be calculated from any combination of KS, NaCl, pH and T within the limits studied (R2 = 0.82).
