BACTERIOLOGICAL EVALUATION OF TRADITIONAL ICE CREAM IN AHWAZ CITY

Abstract

 To evaluate the safety quality, 100 samples of TRADITIONAL ICE CREAM were collected from 5 different area of AHWAZ city. In total count, 88% of the samples were contaminated higher than standard criteria (>5x105 CFU/gr) with a mean of 3.13x106 CFU/gr. 83% of the samples with a mean of 9.63x103 CFU/gr were contaminated higher than standard level (>102 CFU/gr) with enterobacteriacae. E.coli was isolated from 6% of all samples. 61% of the samples with a mean of 7.85x103 CFU/gr contaminated with S.aureus above standard level (>102 CFU/gr). The result of this study shows that the bacterial contamination of TRADITIONAL ICE CREAM in different parts of AHWAZ city is almost the same. The difference of contamination rate between cold and warm seasons was not statistically significant.
