Abstract

The objective of this study was TRIMMING by hand and machinery from Silver Carp (Hypophthalmichthys molitrix) FILLET. The aim of this project was introducing the best type of FILLET TRIMMING by machine handing methods of Silver Carp FILLET. For first time we measured percentage different organs like head, skin, tails, backbone, intestine organs, type of bone and FILLET in whole fish before and after cutting, FILLETing and TRIMMING. The results show percentage of FILLET without skin and backbone) in TRIMMING by machinery line processing was more than handing (45.6-49 respectively), and FILLET TRIMMING speed by machinery was more than hand. Also final results of this study show FILLET trimmed without skin and backboneless by machinery method for Silver Carp was best about shape and consumption.
