Abstract

Bioactive peptides derived from plant sources have great potential for use in the development of functional foods, offering various therapeutic benefits such as antioxidant, anti-inflammatory, anti-cancer, antimicrobial, immune-modulating, and blood pressure-lowering properties. Camelina meal, a by-product of Camelina plant seed oil extraction, is rich in protein. Previous studies have highlighted the positive biological properties of Camelina protein, making it a promising candidate for bioactive peptide production. In this study, Camelina seed protein was extracted using two methods: alkaline extraction and ultrasonic extraction. Bioactive peptides were produced through alcalase treatment (500 enzyme units/gram of protein), and their solubility, emulsification, antioxidant activity, and toxicity on human cells were evaluated. The results indicated that ultrasonic extraction with a power intensity of 300 watts for 30 minutes increased protein extraction efficiency by 36. 5% (35. 64%) compared to alkaline extraction (26. 14%). The Bioactive peptides exhibited improved solubility, emulsifying properties, a 30% increase in DPPH free radical inhibition, and a 100% increase in copperreducing capacity compared to the protein. Furthermore, the protein and hydrolysate showed no toxicity on HEK293 human cells at concentrations up to 25 micrograms per milliliter, with a 73% increase in cell proliferation observed. The lowest cell proliferation, with an average increase of 15% compared to the control, was observed at a concentration of 400 microliters. The IC50 value for the hydrolysate was determined as 0. 888 ± 0. 041 mg/ml.
