INVESTIGATION OF EFFECT OF SPRAY DRYER OUTLET-AIR TEMPERATURE ON VIABILITY OF BIFIDOBACTERIAL PROBIOTIC POWDER

Abstract

 Spray drying is an alternative method for preserving microorganisms with high production rates and low operation costs but the produced powders in this method showed a considerable decrease in viable count. Spray dryer outlet-air temperature is one of the most important factors on the reductions in bacterial counts of PROBIOTIC powders. So the aim of this study was to investigate the effect of spray dryer outlet-air temperature on the viable count of treated and untreated bifidobacterial PROBIOTIC powders. The survival of treated and untreated powders was particularly affected with increasing outlet-air temperature but treated powders presented better survival rate compared to the untreated powders in similar condition. Overall BIFIDOBACTERIUM animalis and BIFIDOBACTERIUM adolescentis were shown to be the most resistant and sensitive bacteria with increasing outlet-air temperature, respectively. Treated and untreated BIFIDOBACTERIUM animalis powders showed reductions in bacterial counts with increasing outlet-air temperature, 2.41 and 3.82 logarithmic units, respectively. In contrast, Treated and untreated BIFIDOBACTERIUM adolescentis powders showed reductions in bacterial counts with increasing outlet-air temperature, 4.53 and 6.72 logarithmic units, respectively. Also antibacterial activities of resistant isolates and untreated bacteria were compared with spot test method. The inhibition zone of resistant isolates in spot test method was not showed significant difference (p>0.05) than untreated bacteria. Effect investigation of spray dryer outlet-air temperature on the viable count of bifidobacterial probotic powder could be caused to obtain the best of outlet-air temperature for preserving PROBIOTIC bacteria. Produced resistant bifidobacterial powders could be used as pharmaceutical products or FUNCTIONAL FOOD.
