 SAFFRON (CROCUS SATIVUS L), AN HERBACEOUS STERILE TRIPLOID PLANT, IS USED MAINLY AS A SOURCE OF SECONDARY METABOLITES HAVING AROMATIC AND MEDICINAL VALUE. THE MAJOR SECONDARY METABOLITES OF SAFFRON ARE CROCIN (WHICH IS GLYCOSIDE DERIVATIVES OF TRANSCROCETIN), PICROCROCIN, AND SAFRANAL.
