Abstract

Yersiniosis is a significant zoonotic disease. It is trnasmitted to human through MEAT of infected animals such as pig zeonotic so sheep and cow, also involves vegetable and milk. This bacterium is one of the most common causative agents of food borne disease. YERSINIA caused abundant gastrointestinal diseases including self limited acute entritis, pseudo appendicitis, performation of intestine, bacteraemia, etc. In this study, we want to consider percentage of contamination of red and whie MEAT to distribute in food markets in SHEMIRAN, to consider about contamination of YERSINIA spp.In this study 100 samples were collected during 6 months. Samples were cold enriched in PBS medium (pH: 7.2) and incubated in 4oc for 21 days. During this time, on the days 7, 14 and 21, samples from the enrichment medium were treated with KOH 0.25% for 30 seconds and inoculated on the surface of CIN medium. Then plates were incubated at 25-27o C for 24-48 hours. After incubation period, all presumptive YERSINIA isolates were tested for urease, ONPG, ODC, oxidase tests and etc.In this study, 100 cases of red and white MEAT were examined, 40 cases of them (16%) were contaminated with YERSINIA, which consist 17 cases of red MEAT and 23 cases of chicken MEAT. The most contamination in red MEAT was from YERSINIA enterocolitica and YERSINIA enteridia. The results of this study revealed that 16% of chicken and MEAT samples were contaminated with Y.enterocolitica and other related species and could play an important role in food-borne disease, especially spoilable foods for normaly being kept at 4oc.
