Title

Identification of profile compounds of amino acid of Caspian golden grey mullet (Liza aurata)

Abstract

 The aim of this study was to investigate and identify profile compounds of Amino acid of male and female golden grey mullet (Liza aurata) in both reproductive and non-Reproductive periods. In doing so, 100 pieces of golden grey mullet were caught in two seasons: spring (non-productive) and autumn (reproduction) on the southern coast of the Caspian Sea. After biometry of the samples, protein measurement was performed using standard Kjeldahl method and Amino acid analysis by HPLC. Based on the results, male fish had higher protein content than female fish. In addition, in the non-Reproductive period, the fish had more protein compared to Reproductive period (p<0. 05). There were no significant differences in essential and non-essential Amino acids in male and female fish (p>0. 05), so gender has no effect on the content of Amino acids. Lysine had the highest total amount of essential Amino acids and glutamic acid in the total amount of unnecessary Amino acids in both sexes and in both Reproductive periods. There was a significant difference between the sum of essential and non-essential Amino acids and protein efficiency in two Reproductive periods (p>0. 05). TEAA/TNEAA ratio of fish in the Reproductive period was 0. 99 and in the non-productive period was 1. In addition, leucine/isulosin ratio in golden grey mullet was good. Therefore, golden grey mullet fish are rich in the most important Amino acids in marine aquatic animals and its meat is of high quality.
