World population growth led to growing demand for various and different food source, including aquatics. Today’s aquatics supply protein, improve human nutrition and public health and economic development have an important role. In this research, we have study the effect of spawning season on fish fatty acid composition, and IA and IT indexes in Hendijan region. For this purpose, 45 Liza kluzingeri have been collected during three phases (before sexual maturity, peak of sexual maturity and after spawning maturity, peak of sexual maturity and after spawning) during the month of September, November, December and January 2012. With tow- boats Pursine of Hendijan. Using spss16 software and Duncan comparison test what meaning difference has determined in 95% level (P=0.05). It is shown that, the sum of saturated fatty acids a43.51, 43.07, 13.31, mono unsaturated fatty acids 28.78, 27.33, 17.58, the sum of polyunsaturated fatty acids 22.98, 22.48, 36.48, equsapentanoeic acid 10.61, 10.22, 12.23, dequsapentanoeic acid were 1.33, 0.61, 0.53 in phases before sexual maturity, peak of sexual maturity and after spawning maturity, respectively. IT measures was less than one in three phase, but only at a later stage of spawning IA index was less than one. Therefor it can be concluded that the nutritional value of muscle tissue Liza kluzingeri is higher at post-spawning.
