Title

COMPARISON OF NUTRITIONAL VALUE AND OMEGA-3 FATTY ACIDS IN MUSCLE OF WILD AND FARMED COMMON CARP, CYPRINUS CARPIO

Pages

  31-37

Abstract

Dorsal and ventral muscles of WILD AND FARMED COMMON CARP (Cyprinus carpio) were analyzed for proximate and fatty acid composition. The PROXIMATE ANALYSIS revealed that total lipid content of dorsal and ventral fillet portions of WILD AND FARMED COMMON CARP was 4.4%, 5% and 2.9%, 2.4%, respectively and the difference among them were not statistically significant (p>0.05). The moisture content ranged from 73.2% to 80.8%. The protein content ranged from 13.7% to 20.6% and crude ash from 0.82% to 0.96%. Among all the samples studied for saturated FATTY ACIDS (SFA), monounsaturated FATTY ACIDS (MUFA) and polyunsaturated FATTY ACIDS (PUFA) (whether farmed or wild), palmitic (C16:0), oleic (C18:1n-9) and linoleic (18:2n-6) acids were the predominant FATTY ACIDS, respectively. Dorsal portion of both fish contained a higher level of arachidonic acid (20:4n-6) than ventral portion (p<0.05). The results showed that fatty acid profile did not differ much between WILD AND FARMED COMMON CARP and both fish contained a relatively good level of n-6 and n-3 polyunsaturated FATTY ACIDS (PUFA), particularly linoleic acid (C18:2n-6), docosahexaenoic acids (DHA), and eicosapentaenoic acids (EPA).
