This research was conducted on the microbial, chemical and sensorial aspects of silver carp fillets packed with modified atmosphere packaging. There was 4 treatments as control (C), 2. 5% sodium citrate (CIT), 0. 25 g/kg nisin (N) and 2. 5% sodium citrate with 0. 25 g/kg nisin (CIT-N) that were keeped for 16 days in refrigerator (4± 1° C). and chemical indexes of spoilage (TBA, TVBN), microbial parameters(TPC, PTC) and sensorial aspects (smell, color, texture and total acceptance)also were determined in days of 0, 4, 8, 12 and 16. Results showed that there was an significant decrease in TBA and TVBN values for treatments which were exposed to both nisin and sodium citrate (P<0. 05). Furthermore the (CIT-N) treatment was the lowest treatment for TBA (1. 41 mgM/kg) and TVBN(32. 05 mg N2/100 g) in compare with the other treatments (P<0. 05). and its Microbial parameters (TPC, PTC) was 6. 74, 6. 76 logcfu/g respectively and the control treatment had the highest values for TPC (8. 61) and PTC (8. 22). In concousion, there was an increase in shelflife and quality improvement of silver carp´ s fillets in refrigerator temperature exposed to both nisin and sodium citrate alone and together.

Abstract:

Water contaminated to heavy metals pollution is concerned for health problem because of its toxicity and long term persistent in environment. In this investigation the heavy metals concentration of (Fe, Cu, Zn, Pb, Cr, Cd, Ni) and pesticides paraquat, 2-4-D, imidacluprid were determined at four study station in river after yamchi dam Ardabil Provence. The heavy metals sample were prepared by liquid-liquid extraction MIBK/APDC method the measured by atomic absorption. The residual pesticide were determined by capillary Colum gas chromatography (GC) with ECD detector. The result showed that the heavy metal level were low and most of them were under detectable concentration of atomic absorption equipment. The mean concentration of Fe, Cu, Zn, Cr and Pb 0. 385± 0. 004, 0. 091± 0. 014, 0. 087± 0. 012, 0. 023± 0. 001, 0. 046± 0. 011mg/ l. Cluster Analysis determined 3 different classes of heavy metals which com suggest that the soirees of these heavy metal are difference. The level residual pesticide paraquat and imidacluprid were in samples were very Lowe and the mean concentration of 2-4-D pesticide were 0. 6± 0. 23 µ g/l.

Abstract:

Crucian carp (Carassius carassius) skin was used for production of gelatin. The gel strength of gelatins extracted for 1, 3 and 6 h was between 106-110 g (P>0. 05). Glycine (349. 21-350. 29 residues/ 1000 residues), alanine (131. 15-132. 73 residues/ 1000 residues), glutamine (81. 76-82. 57 residues/ 1000 residues) and proline (89. 95-96. 48 residues/ 1000 residues) were the main amino acids found in gelatins. Extraction time did not change the amino acid composition of gelatin for most of the amino acids; however the content of proline decreased with increasing extraction time. Gelatin extracted for 3 h had different color compared to other gelatins (P<0. 05). Secondary structure of gelatin was influenced by extraction time. AIII/A1450 ratio of extracted gelatins was between 0. 85-0. 86 which confirmed the loss of triple helix in gelatin. Fourier transform infrared (FTIR) spectroscopy indicated that gelatin extracted for 6 h had significantly higher Δ ν (ν I-ν II) (114 cm-1) (114) indicating higher denaturation of α-helix chain. Crusian carp skin could serve as a valuable source for production of gelatin.

Abstract:

This study was done as a part of “ Lar Reservoir Fauna investigation Project” which was carried out at 2008-2009. Fecundity index was considered as one of the biological factors. Fish were caught from four rivers (Delichahi, Ab-Sefid, Elarm, Kamardasht) which inflow into the Lar Dam, using electroshocker. Fish were then measured weight and length, and their age were also recorded. The average body weights, length and age of fish group was 135. 46± 60. 73 g (mean weight± SD), 216. 44± 33. 64 mm and 3. 21± 0. 94 year, respectively. The absolute fecundity was deterrmined between 183 to 1088 with an average of 521. 7± 180. 8 eggs per fish and the relative fecundity was determined as 1. 35 to 10. 15 by an average of 4. 23± 1. 47 eggs per body weight. The absolute fecundity was increased while the fish size and age was increased. However, the maximum absolute fecundity was obtained on fish those had maximum age (5-year old) by average mean fecundity (693. 6± 296. 4). Among related factors to absolute fecundity, the highest correlation coefficient was found in body weight (r=0. 635).

Abstract:

Fin rot syndrome is one of the difficulties in the aquaculture industry, especially in brood stocks which many infectious and non-infectious causes are involved in its onset. Current survey was performed In order to study of the syndrom with emphasis on Pseudomonas in Salmo trutta caspius from the salmonids propagation and breeding center of Shahid Bahonar of kelardasht One hundred and eighty brood stocks having fin damage symptoms were chosen. Bacterial sample from each fish was cultured on Pseudomonas specific media. In the next stage bacterial samples purified and finally seventeen samples were chosen and purified for molecular examination including PCR (Polymerase Chain Reaction) test by using 16S rDNA gen and RFLP (Restriction Fragment Length Polymorphisms) technique with four restriction enzymes including AluI, HinfI, RsaI, and Tru1I. The result of gel electrophoresis of PCR production of pseudomonas samples showed 990 pb after UV radiation and Gel electrophoresis of pseudomonas samples using restriction enzymes showed at least five species or biovars after UV radiation. Several species of Pseudomonas genus involed in fin rot.
